ABOUT OUR REDS FROM THE WINE-MAKER

My goal is to produce World Class wines that will satisfy the most discriminate wine enthusiast.  To do this we start with top quality fruit, both grown on the estate and sourced from local suppliers.  Top Quality wine is made in the vineyard first. 

The best winemakers use state of the art equipment mostly made of stainless steel.  We are fortunate to have equipped our winery with stainless steel de-stemmer/crusher, primary fermenter, and bottling equipment.  This equipment allows for consistency in our process, year to year.

Our style of wine-making is best classed as Bordeaux.  Winemakers in Bordeaux France long ago learned that the best wines are often a blend rather than individual varietals. We barrel age each varietal individually, and even though more expensive we believe the only way to achieve the fruit and complexity associated with top quality wines is to use only the best oak barrels. Once our wines have aged between 15 to 24 months in oak barrels we conduct blending trials to choose the best attributes of each varietal. Understanding and choosing the best attributes of the varietals also allows for top quality blends.  Winemaking is part science and part art, so we consistently monitor our wines through extensive testing.  It is necessary to ensure that the proper balance of acids and tannins is achieved to get the best of what Mother Nature has given us.

Varietal Character, Integration, Expressiveness, Complexity and Connectedness, the five qualities a taster of wine should assess.   Great wine is about nuance, surprise, subtlety, expression, qualities that keep you coming back for another taste.

Our dry wines are made Bordeaux Style and are sure to please the wine connoisseur.  Our Reds are aged 18 to 24 months in oak barrels,  and then laid down in the bottle 6 months or more before the vintage is released.  Therefore, our wines are made to drink now or to hold.  They will keep their flavor, body and aromas for years to come and are sure to make a superb addition to your wine cellar.  


2018 Cabernet Sauvignon

This Cabernet is rich in dark berry fruit flavors on the mid palate.  It is balanced, rich and velvety.

Suggested Food Pairings:  Aged cheeses such as Gouda, Cheddar or Le Moulis.  Often refereed to as the king of wines, Cabernet Sauvignon is a classic pairing partner for meat dishes like beef and lamb.  Have this wine with your favorite steak,or a blue cheese burger.  The classic lamb paring is a rack of lamb prepared with bountiful herbs and a hearty rich sauce heavy on currents, onions, plums and molasses-like flavors.   

What's for dessert?  Any bittersweet chocolate dessert, or espresso gelato.
